Food processing industrial centers. Food industry in russia

Make up the third link agro-industrial complex... Light industry includes the textile, clothing, fur, knitwear and leather and footwear industries. The main industry is textile. It includes - primary processing of raw materials (cotton, silk, wool, flax), spinning production, as well as weaving and finishing of fabrics (coloring, drawing). It is unprofitable to transport raw materials for the textile industry over long distances, therefore, it is more convenient to locate enterprises for the primary processing of raw materials at its sources: wool (), flax (Non-Black Earth Region). Textile industry requires a lot of qualified (mainly women), its products are unprofitable to transport over long distances, therefore labor and consumer factors are important for its placement. The main textile regions of the country have long been the Central (Ivanovo, Kostroma, Moscow regions).

Food industry in the global market between local and multinational settlements... Tackling the theme of the relationship between contemporary Italian food processing and regional specialties - or more correctly local ones, as this provincial and urban dimension, historically defining the latter, may seem like an attempt to link the two terms of a dichotomy.

Given the complexity of this relationship between industry and typicality, which at first glance appears to be contradictory or non-linear, it is a testament to recent decades when the Italian agri-food industry has greatly contributed to the country's exports. thanks to the success achieved in international markets, the typical products and specialties of the multifaceted national production tradition. The economic significance that the latter assumes requires therefore a more detailed analysis of these relations, the role that typical industries have and have had in the evolution of the food sector of the peninsula, the way and times in which the latter evaluated them. making it a tool for penetrating foreign markets.

The food industry produces food for people. It is connected with more than other industries, as it receives raw materials from it. The development and location of enterprises is determined by the location of the consumers of the products, the specialization of agriculture and the conditions of the products.

By the nature of the raw materials used, the industries included in its composition can be divided into two groups:

In other words, here we offer an attempt to look at the evolution of this complex relationship between the traditional specialties of the national agri-food heritage and industrial production, dynamics and milestones that have marked the path over time until current assets are set up.

However, before getting into your own business, it is advisable to clarify the meaning in which these terms are intended to more accurately define the field. First of all, we are talking here only about food products with a wide commercial diffusion, and not about a complex of small artisanal and, above all, agricultural activities, which can also be defined as typical, but which are not recognized as such by the market, at least outside of the this strictly local. Even if, as will be seen, the distinction between these different areas is not always easy to maintain, focus on processes that are projected on large, national or international markets - even in small industries, but are still related to modern technology and to the distribution of anonymous clientele. - allows us to focus our attention on typical products of significant economic value, both in today's global market and in the past.

  • industries using unprocessed raw materials are fish, butter, cereals, canning, sugar;
  • industries using processed raw materials are pasta, bakery, confectionery, etc.

The factories of the first group are located mainly in the regions where the corresponding raw materials are produced: sugar - in the Central region, oil mill - in the North Caucasus. For the production of the second group, the main factors of placement are consumer, since the products of these industries are either perishable, or their transportation costs more than the transportation of raw materials. These industries are located mainly in densely populated areas, in large cities... And only meat - the dairy industry, can be located both in areas of consumption (milk, dairy products, sausage) and in areas of raw materials (canned food).

As for the concept of a typical product, this will also be understood in a limited sense, based mainly on the acceptance of this typicality by the consumer, and not on the integral components of the products. Typicality will be considered, in other words, its social, cultural and economic aspects, rather than its objective, organoleptic or nutritional qualities, which probably also exist in many cases, but whose appeal is clearly outside the purview of the writer.

Moreover, from the point of view of taste and its physiology, the cultural character of what is perceived as good in relation to what is not perceived as such is widely recognized in anthropological literature to such an extent that not only good ', but the same tastes are possible viewed as cultural structures, in some way unrelated to their physiological foundations, in which aspects other than those commonly perceived as sweet, bitter, acidic and salty are involved.

Food and light industry- the oldest industries, but in their development they lag significantly behind many others industrial branches... The crisis that followed the collapse of the USSR hit the hardest. The shortage of raw materials began to affect very sharply, a significant part of which came from union republics... Russian industry is in a state of fierce competition with foreign manufacturers, and the main task of these industries is to improve product quality and reduce its cost.

The Italian food processing cycle in the second half of the twentieth century. Early fifties: income, food consumption and typical foods. A good starting point for observing the relationship between typicality and the food industry in Italy can be the years of the middle of the last century. After the military phase associated with the war, in the early fifties, the country completed its reconstruction and returned to its normal course. With more than two-fifths of its active population - ten times the current percentage - engaged in the agricultural sector, more than 11 of the 47.5 million inhabitants, living in small settlements and scattered houses, account for 13% of the six-year-old illiterate age and only slightly over 10% with a degree higher than elementary, Italian is still far from being able to define a fully modernized society.

The article deals with enterprises food industry Russia: production in 2014 of the main types of products and the structure of owners of organizations. Total reviewed 240 organizations ( 471 the enterprise, taking into account the production facilities that are part of the holdings) of the food industry, which, on average, produce about half of the total Russian production according to the product range listed in the article ( 21 view).

The level of partial development, which, however, characterizes it, is the result of a long process of slow and intermittent achievements with which the peninsula, or at least some of its parts, are somehow connected with the most dynamic centers of known economic and social modernization from the West between eighteenth and nineteenth centuries.

Private consumption is one of the areas where the contradictions and limits of the path of economic growth, which the country makes more obvious and visible. Their punishment in favor of investment, which is typical for other developing countries, entails, first of all, that massive investments made in the sectors of the commodity industry are capital intensive and relatively low absorption work force, give rise to a limited total salary, which, despite the relatively low level of wages in Italian industry, has little impact on widespread consumption and does not stimulate success in the light sectors.

If we look at the dynamics of private consumption, it is only in the twenties that the share of basic necessities begins to show some inelasticity in relation to the increase in income, reflecting that as soon as at this stage a modest increase in spending on family budgets they are no longer completely absorbed by the purchase of primary births, in while widespread caloric intake marks the first deviations from the subsistence minimums of pre-industrial societies.

So, after the severe crises of the 1930s and the military disaster in the 1950s, the Italian consumer basket has embarked on a transformational path that will lead the country, albeit only in the last two decades of the century, to coincide with the models of the developed Western countries.

Of course, with regard to the traditional saturated food of the agrarian societies of the old style, there are some innovations and some progress, modest but significant: pasta, which until the end of the nineteenth century, beyond the most ancient diffusion, remained a valuable product, it began to be widely used by urban popular classes, and along with it, for example, the consumption of sausages also grows; a morning breakfast based on wine is now only in the rural world, while among artisans and working classes the use of coffee is required even through its various substitutes, which predominate in the beginning, especially during the autarchic period; sugar consumption shows some timid improvement, after an almost complete decline during the conflict.

However, upon closer inspection, transformations began in the late nineteenth century with partial recognition of the country in a more general process of Western modernization and that in the middle of the next century, although now constituent acquired elements, did not structurally change traditional patterns of food consumption.

A similar argument can be made for another important aspect of this balance, which is related to the high share of domestic production at which it is located. In addition, in this case, the level of self-consumption, that is, the production and transformation of food in the family, excluding monetization and market relations, is no longer as high as in the pre-industrial past, or at least tends to retain only significant weight in the peasant world. which, as we have seen, is still widespread in the early 1950s.

Urbanization recorded throughout the first half of the century, albeit modest in comparison with that in the following decades, has partially reduced the limits and possibilities of this practice, which, however, remain widespread - slightly due to attachment to habits and traditions, in part out of necessity. - even in the urban world, both among the popular classes and between the middle and lower middle classes.

Common Features of Interpretation, in History of Italy, Annali, 1st volume. From feudalism to capitalism, coordination. For example, the experiments of the peasant masses in the trenches The great war along with much more tragic events - the consumption of cigarettes, biscuits and cans, and in the interwar period, the sons of workers know the rational diet of summer colonies. Or, again, even in Italy new forms of distribution have spread, like consumer cooperatives at the turn of the century or, especially after the conflict, department stores.

Otherwise, these elements of modernization, or related to small elites, middle and middle classes of large urban centers, as in department stores and summer vacations, or when they concern larger social groups, remain in the context of constant scarcity. In the latter case, in short, mass size appears, but it is completely devoid of a rich, abundant character, which, on the contrary, begins to be present in the experience of the most developed Western societies, and primarily American, but in some it also measures countries such as Ingiterra , France or more partly Germany between Belle Epoque and Golden Zwanziger.

And when, with a curious but significant short circuit, the power of new media applied to advertising also spawns a little consumer fever in the peninsula, as happened during the Thirties with the amazing success of the four-musketeer figure competition of Perugina and Buitoni, everything crumbles between the censors. regime and saturation of the production capacity of the two companies, which paradoxically goes one step away from failure.

Even from this point of view, in short, the Italian is a "partly" modern reality in the fifties who knew some aspects of new forms of mass society without experiencing high level consumption, which actually comes from the opposite experience of hunger and the deepest need for war and subsequent years.

Conclusion on the food industry.

The assets of the Federal Property Management Agency in the food industry are as follows:

1.OJSC "Irbit Dairy Plant"... Produces about 1% domestic dairy products.

2. 34% (via OZK) OJSC "Perm flour mill" producing about 1,5% domestic flour.

3. 19.97% Razgulay OJSC (via VEB)... "Razgulyay" produces about 1,5% flour, 9% croup, 6% Sahara.

4. 25.5% OJSC "Hercules" (via OZK). 0,3% release of cereals. 0,48% compound feed.

5. JSC "Tatspirtprom"(3 factories). Almost 11% release of alcoholic beverages in Russia.

6. OJSC "Bashspirt"(5 factories). Almost 4% release of alcoholic beverages.

7. 26.34% OJSC Valuisky Distillery through Rosspirtprom. 0,25% release of alcoholic beverages.

8. SUE "KIZLYARSKY BRANDY FACTORY"- 8% production of cognac in Russia.

9. MVKZ "KiN" (43% through the "Bank of Moscow") - 8,4% production of cognac in Russia.

Once or twice, there was a deal of state property in the food industry - 2.5% of the all-Russian issue listed products (on average). Mainly due to the production of alcoholic beverages at enterprises owned by the Federal Property Management Agency (cognac and alcoholic beverages). But offshore companies and "real" foreigners are seen among the owners of most of the companies reviewed. More precisely:

In p.p. 1-16 (except for alcoholic beverages and tobacco products) considered on average 45% of the all-Russian production of these food products. 70% of them are enterprises with foreign or offshore participation.

In p.p. 17-21 (alcoholic beverages and tobacco) considered on average 72% of the production of these products in Russia. 73% of them are companies with foreign and offshore participation.

That is, offshore companies and foreign companies in the domestic food industry are a massive phenomenon. And state property is sporadic and has little effect on the industry.
